Ground Beef Veggie Stew
This slow cooker stew was a new recipe for us and I'm pleased to say it went over quite well with everyone in the family! The kiddo picked out the carrots and gobbled them right up. My husband said "great supper Hun" and I was just happy to have another slow cooker success! We packed up the leftovers for lunches and another bag for the freezer to see if it will keep in there!
Ground Beef Veggie Stew*
1 lb. ground beef
5 medium potatoes, cubed
16 oz. package baby carrots
3 cups water
1 Packet Dry Onion Soup Mix
1 Garlic Clove, minced
1 tsp. Italian Seasoning
1 tsp. Salt
1 tsp. Pepper
10 3/4 oz. Can Tomato Soup
8 oz. Can Hunts Tomato Sauce
1 Package Frozen Corn
1. Cook ground beef in a skillet and drain off fat.
2. Combine potatoes, carrots, water, dry soup mix, garlic and seasonings in slow cooker.
3. Add Beef and mix well.
4. Cover and cook 4-5 hours or until veggies are cooked to your liking.
5. Stir in tomato soup, tomato sauce and frozen corn and heat additional hour.
We baked some croissants and had a great family meal.
Two nights in a row now, not too shabby!

Spaghetti Night
Nothing fancy tonight! We did try Classico Fire Roasted Tomato & Garlic pasta sauce instead of the usual Prego because Dillon's had it on sale. It was decent but we both decided it wasn't worth the extra mu-la. However, our 16 month old loved the new sauce and demanded seconds! We also had our favorite wine with dinner, Sutter Home White Merlot.
